TURKEY SCALOPPINI WITH WINE 
2 lb. turkey cutlets
Flour
2 tbsp. olive oil
2 tbsp. diced salt pork
1/2 c. sweet butter
1/4 lb. onions, peeled and diced
2 tbsp. chopped parsley
1/3 tsp. salt
1/3 tsp. pepper
1/4 c. red wine
1/2 lb. fresh mushrooms
2 med. sized green peppers
2 lg. ripe tomatoes, thinly sliced
1 good sized garlic clove, mashed

Sprinkle meat with flour. Place oil and butter in skillet and heat. Add pork and onions and saute together. Add meat and brown approximately 5 minutes per side. Add salt, pepper and wine. Cover and simmer for 5 minutes. Slice the mushrooms and green peppers. Add them with the tomatoes to the skillet and cook for an additional 5 minutes. Add garlic and parsley. Cover and cook 10 minutes.
