DUTCH TRUFFLES 
2 c. grated Gouda or Edam cheese
1 to 2 tbsp. cream or ale
1/4 tsp. dry mustard
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. finely chopped celery
1/4 c. finely chopped parsley

Mix grated cheese and chopped celery together. Add mustard, salt, and pepper. Add enough cream or ale to make mixture firm enough to mold; mix well. Form this into balls about the size of a marble and roll in chopped parsley. Chill. Makes 60 balls.
