PEANUT BUTTER COOKIES 
1 c. safflower oil
1 c. peanut butter (Adams, or any other natural peanuts only)
1 c. brown sugar
1 c. granulated sugar
Egg Beaters or equivalent to equal 2 eggs (1/2 c.)
2 c. whole wheat flour
1 tsp. baking powder
1 1/4 tsp. baking soda

Mix oil, peanut butter, sugars and Egg Beaters thoroughly. Measure wheat flour by dipping method. Blend all dry ingredients; stir into oil mixture.

Shape dough into 1 1/4 inch balls. (They will seem oily to you when shaping - but will bake out.) Use very lightly greased baking sheet. Flatten crisscross style with fork. Bake at 375 degrees for 10-12 minutes. Makes about 5 dozen.
