PEANUT BUTTER AND BANANA FROZEN
YOGURT
 
1 packet (1/4 oz.) unflavored gelatin
1 very ripe banana
1/3 c. creamy peanut butter
1/4 c. honey
1 pt. plain nonfat yogurt at room temperature
Wheat germ (optional) 1 tsp.

In a small saucepan sprinkle the gelatin over 3 tablespoons of water and let soften for 5 minutes. Warm over moderately low heat until the gelatin is completely dissolved, about 5 minutes. Alternately, combine the water and gelatin in a glass bowl, let soften for 5 minutes and microwave on high power for 30 seconds; stir.

In a medium bowl mash the banana. Add the peanut butter and honey, stirring with a fork until incorporated. Stir until well blended. Stir in the remaining 1 1/2 cups of yogurt. Transfer the mixture to a container and refrigerate for 3 hours. Serve with a sprinkle of wheat germ. Makes 8 1/2 cup servings.
