KALE SOUP | |
1 lb. fresh kale finely shredded or 2 boxes of frozen kale 1 lb. potatoes -peeled and cubed 1 c. chopped onion 1 1/2 - 2 lbs. linguica cut into 1 inch pieces 1 tbsp. paprika salt & pepper 2 tbsp. of oil 2 cans dark red kidney beans Sauté onion in oil in a 12 quart pot over medium heat. Add linguica. Cook until is heated through. Fill pot half way with water. Add fresh kale. Cook over moderate heat until kale is fully cooked and wilted. Add potatoes, salt, pepper, paprika and beans with juice. Cook until potatoes are tender. |
