GREAT HOT CAKES 
3 eggs
3 c. buttermilk
1 tsp. salt
3 tbsp. sugar
Flour
1/2 tsp. baking soda
4 tsp. baking powder if flour is all-purpose or 2 tsp. baking powder if flour is self- rising
6 tbsp. vegetable oil

Beat eggs. Add milk, salt, and sugar. Beat thoroughly. Add enough flour to make a batter consistency. Do not beat well. Hot cake batter should be slightly lumpy. Add soda and baking powder. Stir in oil.

Note: If any batter is left over, use batter to fry onion rings. Substitute cornmeal for flour and use this recipe for egg bread.
