CHOCOLATE MOUSSE 
1 pkg. (6 oz.) semi-sweet bits
3 eggs, separated
2 pt. sweet cream
1 lg. pkg. cream cheese (room temperature)
1/2 c. brown sugar
1 tsp. instant coffee
1 1/2 tsp. vanilla
1 pkg. gelatin (dissolved in 1/2 c. water)

Dissolve chocolate bits over hot water in a double boiler. Beat in cream cheese until smooth and fluffy. Gradually add brown sugar and 1 teaspoon coffee. Add 3 egg yolks and beat after each one. Add vanilla, then add cooled chocolate bits and gelatin. Beat 3 egg whites stiff and fold into mixture. 1 pint of cream whipped and fold that into mixture. When ready to serve, whip other pint of cream and put on top of mousse. Keep refrigerated until ready to serve. Just before serving, sprinkle shaved chocolate on top.
