QUICK AND EASY CHOCOLATE MOUSSE 
12 oz. (2 c.) semi sweet chocolate chips
1 1/2 tsp. vanilla
Pinch of salt
1 1/2 c. whipping cream, heated to boiling point
6 egg whites
Whipped cream (optional)

Combine chocolate, vanilla and salt in blender or food processor fitted with steel knife and mix 30 seconds. Add boiling cream and continue mixing 30 seconds more or until chocolate is completely melted. Add yolks and mix about 5 seconds. Transfer to bowl, allow to cool. Beat egg whites until stiff peaks form. Gently fold into chocolate mixture. Place in serving bowl or dessert glasses, cover with plastic wrap and chill. Serve with whipped cream if desired.
