ORANGE MUFFINS 
1 1/2 c. whole wheat flour
1/2 c. oat bran
1/2 c. raisins
1 1/2 tsp. baking soda
3/4 c. orange juice
1/4 c. egg substitute
1/4 c. honey
2 tbsp. canola oil
Grated rind of 1 orange

Combine flour, bran, raisins, and soda. Mix orange juice, egg substitute, honey, oil and orange rind. Stir liquid ingredients into dry ingredients until just blended, don't over mix. Cook in muffin pans sprayed with Baker's Joy. Fill about 3/4 full with batter. Bake for 15 minutes at 375 degrees. Makes 12.
