AVOCADO CHICKEN SALAD 
1 cooked stewing chicken, cut into bite sized pieces
4 tbsp. salad oil
1/4 tsp. ground ginger
1 c. sliced celery
4 c. bite sized chunks of chicken
2 tbsp. fresh lime juice
1 lg. head lettuce
1 lg. ripe avocado

Combine salad oil, lime juice, and ginger in cup. Sprinkle over chicken. Toss well. Cover; chill. Put lettuce leaf on each plate. Shred some lettuce with celery; divide evenly into lettuce cups. Top with mounds of chicken, sliced avocado - 3 slices on each mound to garnish.
