BRANDIED CHICKEN | |
6 chicken breasts 1 (8 oz.) jar apricot preserves 1 stick butter 1 pt. apricot brandy Preheat oven 350 degrees. One hour before baking, soak chicken breasts in apricot brandy. Keep refrigerated. Save 3/4 of the brandy for sauce. Drain chicken and save brandy. Bake chicken approximately 20 minutes while basting with brandy. During the last 20 minutes of baking, coat with apricot sauce. APRICOT SAUCE: In a saucepan, heat apricot preserves, butter and 3/4 cup apricot brandy. When heated thoroughly (do not boil), use to coat chicken breasts while baking. Serve with UNCLE BEN'S® long grain wild rice and broccoli. |
