PUMPKIN PANCAKES 
2 c. flour
2 tbsp. sugar
4 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. allspice
1 1/2 c. milk
1 c. pumpkin
4 egg yolks
1/4 c. melted butter (oleo)
4 egg whites
1 c. apple cider
1 c. syrup

Sift together flour, sugar, baking powder, salt and spices. Add milk, pumpkin, egg yolks and melted butter to dry ingredients, stir just until blended.

Beat egg whites until stiff, fold into batter. Bake on lightly greased hot griddle using 1/4 cup batter for each.

Meanwhile combine cider and syrup; simmer, uncovered 10 to 15 minutes to thicken slightly. Serve warm over pancakes. Makes about 2 dozen pancakes.
