“CHARLES' PANCAKES FROM SCRATCH” IS IN:

CHARLES' PANCAKES FROM SCRATCH 
1 egg
1 cup low fat milk
1/2 tsp. vanilla extract
1 cup all-purpose flour
2 tsp. baking powder
1/2 tsp. salt

Beat egg, milk and vanilla together. Combine remaining ingredients and stir into the batter, just until somewhat smooth, but slightly lumpy. Don't over mix.

To make pancakes; pour a little batter onto a hot griddle. Leave at least 2-inches of space between pancakes. Allow them to cook until the tops of pancakes are bubbled, then turn with spatula. Cook just until the underside is lightly browned.

Makes 10 (4-inch) pancakes. Recipe may be doubled. Unused batter may be stored in the refrigerator. Thin with a little cold water if batter becomes too thick.

These pancakes are sooo yummy and easy! I make them at least once a week. I add more liquid as I like a thinner pancake-more milk and vanilla. Today I added some nutmeg. It's a perfect amount for two servings. Way quick and easy! Thanks, Charles!

I added 1/4 cup of Splenda to it, used self-rising flour instead of all-purpose flour, and omitted the baking powder and salt. I will never, ever buy pancake mix again. This was so delicious and so easy!

Fantastic! This recipe is the bomb! At first I tasted the batter and said it needed sugar. BUT, I waited and tried pouring enough batter for one pan cake. Boy was I ever so happy I did! Perfect recipe! I'm making mine pancakes from scratch from now on!!

I doubled the recipe, added three tbsp. melted and slightly cooled BUTTER to the wet mix. Then added three tbsp. granulated sugar to the dry mix. Once on the griddle I added Crumbled Pecans...

Not bad, only had baking soda, dont know if it matters. I added bananas cut up to the batter, wasnt something ill do again, a little too much banana taste for me, better in banana bread. Thanks for the recipe
