“CHARLES' PANCAKES FROM SCRATCH” IS IN:

CHARLES' PANCAKES FROM SCRATCH 
1 egg
1 cup low fat milk
1/2 tsp. vanilla extract
1 cup all-purpose flour
2 tsp. baking powder
1/2 tsp. salt

Beat egg, milk and vanilla together. Combine remaining ingredients and stir into the batter, just until somewhat smooth, but slightly lumpy. Don't over mix.

To make pancakes; pour a little batter onto a hot griddle. Leave at least 2-inches of space between pancakes. Allow them to cook until the tops of pancakes are bubbled, then turn with spatula. Cook just until the underside is lightly browned.

Makes 10 (4-inch) pancakes. Recipe may be doubled. Unused batter may be stored in the refrigerator. Thin with a little cold water if batter becomes too thick.

Great texture and a perfect ratio of flour to milk. Not sure why there's an egg in the recipe; it's not needed.

-- Left out the egg.
-- Used almond milk instead of cow.
-- 2 tbsp of vanilla.
-- Added walnuts.

Drizzled with honey, they make a perfect meal.

Great recipe! I have all these ingredients at all times. I looked over the reviews and omitted salt and added a 1/4 cup sugar and I used whole wheat flour! Lots of positive comments from my teenage kids!

I doubled it and used this recipe as a batter for chicken strips... OMGZ Awesome tyvm!!! I seasoned and cooked the chicken then dipped it in pancake batter then fried till bubbled on one side flipped and cooked the other side... The best!!!

This is a great recipe. I have made pancakes in the past with a different recipe. The addition of vanilla makes a big difference. I used whole wheat flour and mixed batter using a blender. I also added 1/4 cup extra milk. Pancakes were light.

This makes great pancake batter. The key is to use a great non-stick pan and low heat - I didn't even have to use butter/oil. I added blueberries and made a maple butter syrup (half butter and half maple syrup). Add some toasted nuts (pecans, walnuts, or almonds) on top for a little crunch and sprinkle some powdered sugar on top.
