BEEF LIVER IN A CASSEROLE 
2 tbsp. instant minced onion or 1/2 c. finely chopped onion
1 1/4 c. beef broth
1/3 c. tomato catsup
1 tbsp. Worcestershire sauce

Blend ingredients in a small bowl. Let stand while preparing liver. Mix:

1 tsp. paprika
1 tsp. salt (opt.)
1/4 c. sifted all-purpose flour

Dredge well:

1 - 1 1/2 lbs. thick sliced beef liver

Brown quickly on both sides in heated fat. Remove to casserole. Add liquid mixture to pan drippings. Bring this to a boil, picking up all brown particles. Pour over liver. Cover, bake in a moderate hot oven, 375 degrees, for 30 to 45 minutes or until liver is tender. 6 to 8 servings. Serve with steamed rice and salad.
