MASHED POTATO CASSEROLE 
10 med. potatoes
1 c. sour cream
1 c. dry cottage cheese
1 chopped onion
1/2 c. butter
1/4 tsp. pepper
1 tsp. salt
1/4 c. Parmesan cheese

Put a pat of butter and the onion in the microwave 3 minutes; stir 3 more and its done.

Boil potatoes in water until tender. Mash or dice. While still hot, add sour cream, cottage cheese, onion, butter, pepper, salt and Parmesan cheese; mix well.

Place in casserole. Sprinkle Parmesan on top. Bake in a 325 degree oven for 30 minutes. Serves 8-10.

Since microwave ovens vary in power, you may need to adjust your cooking time.
