JAZZY MASHED POTATOES 
3 lbs. potatoes, peeled & cubed
1/2 tsp. salt
1/4 c. butter
1/2 c. milk
1/2 c. commercial sour cream
2 tbsp. frozen chives
1/4 c. grated Parmesan cheese
Paprika

Cook potatoes in boiling water with salt about 30 minutes, or until tender. Drain potatoes, and mash. Add butter, milk, sour cream, and chives; mix well. Spoon mixture into a lightly greased 1 1/2 quart casserole. Bake at 350 degrees for 25 minutes; sprinkle with cheese and paprika, baking an additional 5 minutes. Serve immediately. Yield: 4 to 6 servings.
