DIABETIC COOKIES (OATMEAL
RAISIN)
 
1 1/2 c. hot water
1/2 c. shortening
2 c. raisins
1/2 tsp. nutmeg
2 tsp. cinnamon
2 beaten eggs
1 tsp. water
4 packets Sweet & Low
1 1/2 c. all-purpose flour
1 c. oatmeal
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt

Combine hot water, shortening, and raisins, let cool. Mix other ingredients together and add to first mixture. Drop by tablespoon on greased and floured cookie sheet. Bake in preheated oven at 350 degrees for 10 to 12 minutes. Store in tight jar.
