DIABETIC OATMEAL COOKIES 
1 1/2 c. quick oatmeal
2/3 c. melted butter
2 eggs, beaten
1 tbsp. liquid sweetener or 1/3 c. Equal
1 tsp. vanilla
1 1/2 c. flour
1/2 tsp. salt
2 tsp. baking powder
1/2 c. crushed pineapple
1/4 c. raisins

Cream butter, eggs, sweetener and vanilla. Add dry ingredients. Add pineapple and raisins. Drop by teaspoon. Bake 350 degrees 8-10 minutes. 3 dozen.

Used Truvia instead of equal. Taste is ok but the cookies are very pale. I prefer mine to be a bit browner.

I replaced 1/2 cup of flour with soy flour to cut the carbs a bit. They are delicious!
