FRUIT CAKE 
3 eggs
1 1/2 sticks unsalted butter
1/2 c. sugar
1 1/2 c. sifted flour
1 1/2 tsp. baking powder
Pinch of salt
1 tsp. flavoring (vanilla or almond)
1 c. peaches, peeled and sliced thinly or canned peaches, drained OR
1 c. blueberries (soak in some sugar and then drain off juice)

Cream butter and sugar very well. Add eggs, one at a time and flavoring; beat well. Slowly add remaining ingredients. Pour batter into well-greased 9-inch spring-form baking pan. Add fruit on top of batter; press down lightly. Bake at 400 degrees for 10 minutes, turn oven down to 375 degrees and bake approximately 20 more minutes.
