MOM'S ZUCCHINI CAKE 
2 c. sugar
3 eggs
2 tsp. cinnamon
1 c. vegetable oil
3 c. grated zucchini
2 c. plus 2 tbsp. flour
2 tsp. baking soda
1/2 tsp. baking powder
2 tsp. vanilla
1 tsp. salt
1 c. raisins, soaked in boiling water, drained

Beat eggs, add sugar, cinnamon and vanilla and oil; beat until creamy. Then add the zucchini and softened raisins. Mix flour with soda, baking powder, salt and vanilla. Add flour mixture to first wet ingredients, beating after each addition. Pour into 3 bread size pans, greased and lined with waxed paper, about 1/2 to 3/4 full.

Bake at 350 degrees for 55 minutes. Cake is done when toothpick in center comes out clean and crack shows on top. Cool in pans.
