OATMEAL CAKE AND TOPPING 
1 c. quick oatmeal, soaked in 1 1/3 c. boiling water for 20 minutes
1 c. granulated sugar
1 c. brown sugar
1 c. shortening
2 eggs, beaten
1 1/3 c. flour (1 1/2 c. may be used)
1 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt

Mix sugar and add to the shortening. Cream. Add eggs, beating after additions. Add oatmeal to the creamed mixture. Sift dry ingredients, flour, soda, baking powder, cinnamon, and salt. Stir to mingle the ingredients. Add vanilla. Bake in a baking pan, greased lightly and floured. Bake about 35 minutes in a 350 degree oven. Add topping.

TOPPING:

1 c. brown sugar
1 c. coconut
1/2 c. nuts, chopped
4 tsp. butter
1/3 c. cream or milk

Cream sugar with butter. Add coconut, moisten with the cream. Spread nut on top of the cake after it is done. Put under broiler and broil until the topping bubbles up and spreads over the top of the cake.
