CARROT CAKE 
1 1/2 c. Mazola oil
2 c. sugar
4 eggs
2 c. grated carrots
3 c. flour
1 c. walnuts
3 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt

Mix oil, sugar, eggs and grated carrots together and add remaining ingredients. Put into a high tube pan which has been greased. Bake in 275 degree oven 1 1/4 to 1 1/2 hours.

ICING:

1 c. powdered sugar
1 cake Philadelphia cream cheese (3 oz.)
Small amount of milk

Be careful any added milk makes the frosting too creamy, and drippy!! Mix all ingredients together and spread over cooled cake.
