CHARLOTTE'S HAWAIIAN CHICKEN 
2 chickens, cut into 1/8's
1 jug ketchup
2 cans unsweetened pineapple rings or chunks
3 med. onions
2 lg. peppers
3 tbsp. cornstarch (optional)

Cut 2 chickens into 1/8's. Preheat oven to 350 degrees. Put chicken into roasting pan (skin side down) cook for 20 minutes. Mix 1 jug ketchup with unsweetened pineapple. Saute onions, peppers, and add to mixture.

Remove chickens from oven and drain liquids from pan. Pour mixture over chicken (optional add cornstarch or flour to mixture). Turn chicken and bake 45 minutes. Serve over rice.
