ORANGE MUFFINS 
1 c. sugar
1/2 c. orange juice
1/2 c. butter
1 c. sugar
3/4 c. sour cream
2 c. flour (sifted)
1 tsp. baking soda
1 tsp. salt
1 tsp. dry orange rind
1/2 c. raisins
1/2 c. chopped nuts

Mix 1/2 cup orange juice and 1 cup of the sugar - set aside.

Cream butter and sugar. Add sour cream alternately with the dry ingredients - the result will be a very stiff batter. Fold in orange rind, raisins and nuts.

Bake in well greased mini muffin tins at 375 degrees for 15-20 minutes. While warm, dip muffins in reserved sugar/juice mixture.
