MORNING GLORY MUFFINS 
In a large bowl, combine:

1 1/2 c. all purpose flour
2 c. whole wheat flour
1 c. brown sugar
4 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
1 tsp. nutmeg

In another bowl:

1 c. honey
2/3 c. oil
1 c. milk or orange juice
2 tsp. vanilla

Make a well in center of dry ingredients. Add liquid ingredients. Stir just to combine.

Stir in:

1 1/2 c. coconut or nuts
3/4 c. raisins

Place paper liners in 36 muffin cups. Spoon batter into papers filling almost full. Cover each muffin pan with heavy duty foil and freeze until firm. If necessary, chill batter while one batch freezes. Then remove muffins and repeat process.

TO BAKE: Preheat oven to 375°F. Place frozen muffins in pans and bake about 20 minutes.
