MORNING GLORY MUFFINS | |
1 1/4 c. sugar 1 1/4 c. flour 1 tbsp. cinnamon 2 tsp. baking soda 1/2 c. shredded coconut 1/2 c. raisins 2 c. grated carrots 1 apple, shredded 8 oz. drained, crushed pineapple 3 eggs 1/2 c. vegetable oil 1 tsp. vanilla Sift dry ingredients. Add fruit and carrots. In a separate bowl whisk eggs with oil and vanilla. Blend with dry ingredients. Fill to top of muffin tins. Bake 350 for 35 minutes. |
