MORNING GLORY MUFFINS 
2 c. flour
1 1/4 c. sugar
2 tsp. cinnamon
1/2 tsp. salt
2 c. grated carrots
1 c. salad oil
1/2 c. nuts, chopped
1 apple, peeled, cored & grated
2 tsp. baking soda
3 eggs
1/2 c. raisins
2 tsp. vanilla

Combine flour, sugar, baking soda, salt and cinnamon. Stir in carrots, raisins, nuts and apple.

In a separate bowl, beat eggs, oil and vanilla. Stir into flour and carrot mixture until batter is just combined. Spoon into greased and floured muffin cups. Fill to the top.

Bake at 300°F for 25 minutes.

Makes 14 large muffins.
