ARTICHOKES BRAISED IN WINE | |
6 med. artichokes, trim sharp points and slice stem to bottom 2 tbsp. butter 2 tbsp. oil 6 large cloves garlic, minced 2 c. dry white wine 2 oz. fresh lime juice Place artichokes along with 1 cup water in a pressure cooker and cook at high pressure for 10 minutes. Rinse cooker under cold water to release seal; remove artichokes from cooker and let cool a few minutes. Pull off the leaves, remove the choke (hairy part) and slice the heart into 10 to 12 pieces. In sauce pan, place butter, olive oil and garlic and simmer for 3 minutes. Add lime juice and artichokes, coating the vegetables well (otherwise it will oxidize and turn brown). Add wine, cover pan and simmer for 1 hour. Add more wine if needed. |
