TURKEY CASSEROLE 
5 to 7 tbsp. butter
1/4 c. flour
1/4 tsp. pepper
1/2 tsp. paprika
1 tbsp. salt
2 c. milk
1/4 lb. Cheddar, sliced
3/4 lb. onions, chopped
2 c. cooked turkey
1 c. bread crumbs

Melt 3 tablespoons butter in double boiler. Blend in flour, pepper, paprika, and salt. Gradually add milk, stirring constantly. Cook until thick, then add cheese, stirring until melted and thick. Meanwhile, cook onion in butter. Blend with cheese mixture. Add turkey. Stir with fork. Place in buttered 2 quart casserole and cover with bread crumbs. Sprinkle with 2 tablespoons melted butter. Bake at 350 degrees for 20 to 25 minutes.
