LOVE-LIGHT MAPLE NUT CAKE | |
2 eggs, separated 1/2 c. white sugar 2 1/4 c. cake flour 3 tsp. baking powder 1 tsp. salt 1 c. brown sugar 1/2 c. Wesson oil 1 c. milk 1 tsp. maple flavoring 1/2 c. nuts, chopped Beat egg whites until fluffy. Gradually add white sugar; continue beating until very stiff and glossy. Sift flour, baking powder and salt in another bowl. Add brown sugar, oil and half of milk. Beat 1 minute (100 strokes by hand). Scrape sides of bowl often. Add remaining milk, egg yolks and flavoring. Beat 1 more minute. Fold in meringue. Bake at 350 degrees for 30 to 35 minutes. |
