DORIS' CARROT PUDDING 
1 c. suet
1 c. brown sugar
1 c. grated carrots
1 c. raw potatoes
1 c. raisins
1 c. currents
1 egg
1 tsp. salt
1 tsp. baking soda
1 tbsp. extract
1/2 c. flour
1/2 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
2 tbsp. sour milk

Mix sugar and suet (or shortening). Beat in egg, sour cream and vanilla. Add vegetables and spices, raisins and currents. Add flour, salt, soda, nuts and cherries - optional. Pour into mold and steam for 2 1/2 hours.
