MOM'S RICE PUDDING 
1 c. rice
2 c. water
1 large can evaporated milk
1 c. sugar
3 beaten eggs
3 to 3 1/2 c. milk
1 tbsp. vanilla
1/2 c. raisins (optional)
sugar and cinnamon (to sprinkle)

Combine rice and water and cook until rice is cooked. Add the eggs, sugar and milk and cook until all blended and thickened. Can add raisins and vanilla. Stir. Pour into bowl; sprinkle with sugar and cinnamon. When cool, serve topped with whipped cream.
