ROSE-PETAL JAM 
1 qt. fragrant rose petals, tightly packed (pesticide free)
3 c. water
1 pkg. Sure-jell
2 tbsp. lemon juice
Red food coloring (optional)
4 c. sugar

Heat petals and water to boiling. Steep 20 minutes. Strain and reserve petals. Measure liquid, add water to make 3 cups. Mix liquid with Sure-jell, lemon juice, and a few drops of red food coloring.

In a large stainless-steel pan bring mixture to a boil over high heat. Add sugar, bring to a rolling boil for exactly 1 minute. Remove from heat and stir in rose petals to prevent rose petals from floating. Pour into jars and seal.
