RAISIN `N' SPICE MUFFINS | |
2/3 c. leftover cooked enriched white hominy, quick or regular grits 2/3 c. milk 1/3 c. vegetable oil 1 egg 2 tsp. grated orange peel 2 c. unsifted all purpose flour 3/4 c. raisins 1/4 c. packed brown sugar 1 tbsp. baking powder 1 tsp. ground cinnamon 1/4 tsp. salt 1. Heat oven to 375 degrees. Grease 12 medium-sized muffin cups or line with paper baking cups. 2. In small bowl, combine cooked grits, milk, oil, egg and orange peel; mix well. In large bowl, combine remaining ingredients. Add grits mixture, mixing just until dry ingredients are moistened. 3. Fill prepared muffin cups 2/3 full. Bake about 25 minutes or until wooden pick inserted in center comes out clean. Serve warm. Makes 1 dozen muffins. |
