MEXICALI GRITS | |
3/4 c. grits 3 c. boiling water 1 tbsp. salt 6 tbsp. butter 8 oz. sharp cheddar cheese 1 roll jalapeno cheese 2 eggs, beaten 1 sm. can green chilies (seeded and thoroughly mashed) 3 drops Tabasco Add grits gradually to boiling salted water. Boil until thick (about 5 minutes). Stirring occasionally. Add butter and cheeses and melt into grits. Continue stirring and add 2 beaten eggs. Let come to a boil. Add 1 small can green chilies and Tabasco. Pour into 9 x 9 inch baking dish. Sprinkle paprika on top. Bake 1 hour at 250 degrees. |
