RED HOT PICKLES | |
5 quarts peeled, seeded cucumbers cut into long thin strips. Use large cucumbers. Mix 4 1/2 quarts water and 1 cup canning salt. Pour over cucumbers and let stand 24 hours. Wash well and soak in clear cold water 3 hours. Drain. Mix: 2 tsp. red food coloring 1 1/2 tsp. powdered alum Pour over cucumbers and add just enough water to cover. Simmer 2 hours. Drain well but don't wash. Bring to boil: 2 c. water 6 c. sugar 4 cinnamon sticks 1 c. red hot candies Pour over cucumbers and let stand overnight. Next A.M. process in water bath canner 5 minutes. Makes about 5 pints. |
