APPLE PIE 
Mixture of apples (about 8 apples)
1/2 c. light brown sugar
1/2 c. sugar
2 tbsp. flour
1 tsp. grated lemon peel
1/2 tsp. ground cinnamon
Dash of ginger
Dash of ground mace
1/2 tsp. apple pie spice
1/4 tsp. nutmeg
1/4 tsp. allspice
1/4 tsp. salt
1/4 c. butter
Pastry for a double crust pie

Combine brown sugar, sugar, flour, lemon peel, cinnamon, ginger, mace, apple spice, nutmeg, allspice and salt. Peel apples and thinly slice them in a separate bowl. Sprinkle apples with lemon juice and coat them with butter. Mix in all ingredients. Fill pie crust with apples, cover the edge of pie with foil. Bake in oven at 375 degrees for 50 minutes. Remove foil half way through.
