MARCIA'S CURRIED CHICKEN SALAD
(IN ITALY)
 
2 c. diced cooked chicken
1 apple, peeled and diced
1/4 c. white raisins
1/3 c. chopped dates
2 tbsp. chopped chutney, including syrup
1/2 c. shredded canned coconut
1/2 tsp. salt

Combine all the above, then make following dressing: 1 tablespoon curry powder, 2 tablespoons chicken consomme (2 tablespoons water and 1/8 teaspoon bouillon) and 1 cup mayonnaise. Simmer curry powder in consomme for 2 minutes. Stir to smooth paste. Cool. Add paste to mayonnaise. Then add this mixture to chicken mix. Chill.
