PERSIMMON PUDDING WITH SAUCE | |
2 c. persimmon pulp 2 c. sugar 2 eggs, beaten 1 1/2 c. flour 1 stick butter (1/2 to 1) 1 1/2 c. buttermilk 1 tsp. baking soda 1 tsp. cinnamon 1 tsp. vanilla 1 tsp. baking powder 1/8 tsp. salt 1/4 c. cream Mix sugar and pulp together. Mix soda in buttermilk then add all together. Bake at 350 degrees about 30 to 45 minutes. SAUCE FOR TOPPING: 2 tbsp. flour 1 c. brown sugar 1/2 c. water 1/2 stick butter Dash of cinnamon Let come to a boil. Stir until cool. Pour over pudding. Use all this even if you bake a small pudding. Serves 12. I usually make 1/2 of this recipe. |
