PERSIMMON PUDDING 
1 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. cinnamon
1/2 c. milk
1 tsp. vanilla
1 egg
1 c. persimmon pulp
3/4 c. sugar
1/2 c. nuts, chopped
1 c. raisins

Mix dry ingredients. Add egg beaten with milk and pulp. Mix flour with nuts, etc. Bake in pan of water for 1 hour in 350 degree oven.

SAUCE:

3 tbsp. butter
1 c. powdered sugar
2 eggs, separated
1 c. cream or milk

Cook cream, sugar and butter over hot water. Add egg yolk; beat well and remove from heat. Cool slightly and fold in beaten egg whites. Serve over pudding.
