PERSIMMON PUDDING 
1 c. ripe persimmon pulp
1 c. sugar
2 tbsp. butter, melted
1 egg, well beaten
1/2 c. cream
1 c. flour
2 tsp. baking powder
1/2 c. buttermilk
1/2 tsp. baking soda
1 tsp. cinnamon
Salt
3/4 c. chopped pecans

Mix all of the ingredients together and bake at 350 degrees for 1 hour. It is normal for this pudding to sink in the middle. This can also be put into a pie shell.
