PERSIMMON PUDDING 
1/2 c. Crisco oil
2 eggs
1 c. sugar
1 1/4 c. self-rising flour
1 1/2 tsp. cinnamon
1 1/2 c. puree (persimmon)
1 c. milk

ICING:

1/2 c. brown sugar
3 tbsp. flour
1/4 c. butter flavored oil
1/2 c. sugar
1 c. water
1 tsp. vanilla

Mix all the pudding ingredients together and pour into greased 13 x 9 inch pan. Bake 1 hour at 350 degrees.

To make the icing, blend brown sugar, white sugar and flour. Add water, then butter or oil and vanilla. Cook over medium heat until thick. Pour over pudding while hot.
