YAM AND APPLE CASSEROLE 
Serves 6:

3 med. to lg. yams
2 apples, peeled and cored
Salt to taste
1/4 c. firmly packed brown sugar
1/4 c. butter, melted

Cook yams until just tender. Peel. Butter a 2 quart casserole. Arrange one sliced yam on bottom of casserole. Season with salt. Add 1 tablespoon water. Slice one of the apples over yam layer. Sprinkle with half the sugar; drizzle a little butter over. Slice another yam over apple layer. Season with salt. Cover with second apple, sliced; then sprinkle with remaining sugar. Arrange remaining yam slices on top; drizzle remaining butter over all. Cover, bake at 375 degrees for 30 minutes; uncover, bake about 10 minutes longer or until apples are tender.
