SWEET POTATO CASSEROLE | |
2-3 lb. sweet potatoes, peeled & cut 2 eggs 1 stick butter 1/2 tsp. cinnamon 1/2 c. sugar 1/2 tsp. nutmeg TOPPING: 1 c. corn flakes or 40% Bran Flakes 1/2 c. brown sugar 1 stick butter 1 c. nuts, chopped Heat oven to 400 degrees. Cook potatoes and mash. Place butter in. Beat sugar, cinnamon, nutmeg and eggs together. Pour into potatoes and mix well. Pour into 9 x 12 inch baking pan and bake 20 minutes. Mix topping ingredients together. Place on top of potatoes and bake another 15 minutes. |
