SWEET POTATO CASSEROLE 
2 c. mashed potatoes (approximately 4 yams)
1/4 c. butter, melted
2 eggs, beaten
1 (5 oz.) can evaporated milk
3/4 c. sugar
1 tsp. vanilla
Lots of nutmeg

Combine all ingredients and beat until smooth. Pour into greased casserole. Bake at 400 degrees for 20 minutes.

TOPPING:

1 c. crushed Corn Flakes
1 c. brown sugar
1 c. pecans, chopped
1/2 c. butter, melted

Combine and top casserole. Bake at 350 degrees for 20 minutes.
