FAT FREE GRAVY 
2 c. de-fatted meat juices or broth
1/4 c. flour
1/2 c. cold water
Salt and pepper to taste

Bring broth and juices to a boil. Shake flour and water in a covered jar to form a smooth paste. Gradually add to broth. Reduce heat. Simmer 10-15 minutes and season to taste.

To de-fat meat juices, pour meat juice in a bowl, add a few ice cubes. Put in freezer for 10-15 minutes or until fat congeals at the top around cubes. Discard ice cubes and fat.
