SPICY OVEN FRIED CHICKEN 
1/2 c. yellow cornmeal
1 1/2 tsp. salt
1/4 tsp. pepper
2 - 3 1/2 lbs. fryer (cut up)
1/3 c. butter, melted
1/2 c. flour
1 1/2 tsp. chili powder
1/2 tsp. oregano
1/2 c. milk

Combine cornmeal, flour, salt, chili powder, oregano and pepper. Dip chicken in milk; then coat with cornmeal mixture. Place chicken skin side up in large shallow baking dish; drizzle butter over chicken. Bake in oven at 375 degrees about 45 to 50 minutes. Skin chicken for a crispy crust.
