SPICY OVEN FRIED CHICKEN 
1/3 c. Aunt Jemima enriched white corn meal
1/3 c. all-purpose flour
1 1/2 tsp. chili powder
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. pepper
1 (2 1/2 to 3 lb.) broiler-fryer chicken, cut up
1/4 c. milk or water
1/4 c. butter, melted

Heat oven to 375 degrees. Lightly grease 15 x 10 inch jelly roll pan. Combine dry ingredients. Dip chicken pieces in milk; coat with dry ingredients. Place chicken. Skin side up, in prepared pan; lightly brush with butter. Bake 50 to 55 minutes or until juices run clear when chicken is pierced with fork. Makes 4 servings.
