VIDALIA ONION CASSEROLE 
5 lg. Vidalia onions
2 sticks butter
24 Ritz crackers, crumbled
Parmesan cheese

Slice onions into rings and saute in butter 15-20 minutes or until tender. Put half of onions in casserole dish, top with half of crumbs and sprinkle with cheese. Repeat, ending with cheese. Bake uncovered at 325 degrees for 30 minutes.
